Anything to do with chocolate immediately get my attention, and these choc coconut balls had me at 'Hello'!
When the kids were little I was able to send them off to make these choc coconut balls and sit on the couch with a cup of tea, yes they made a mess - yes they ate most of the ingredients, but they had fun! Crushing up the biscuits is noisy and messy but by far the hardest step of making these simple chocolate balls.
Ingredients::
- One packet (250g) milk arrowroot biscuits
- 1/3 cup (40g) cocoa powder
- 1/2 cup (45g) desiccated coconut (plus a little extra for rolling the balls in)
- One tin (395g) condensed milk
Method::
- Crush the biscuits and place into a mixing bowl.
- Add cocoa and coconut, stir together then add condensed milk.
- Take a small amount of mixture and roll into a ball, then roll through extra coconut.
- Continue with the rest of the mixture, place the chocolate balls on a plate and chill in the fridge for 30 mins.
Variation of this recipe::
- Add a marshmallow to the centre of the ball for a sweet surprise
- After making your balls roll in 100’s & 1000’s for added colour and sparkle. Make your balls super tiny and then roll them up - so cute!
- Rather than rolling into individual balls, roll into a log shape and then cut into slices
- Swap the rolling in coconut step for rolling in cocoa for a more decadent chocolate ball
- Add in some apricots to pretend it's healthy for you!
- Add a combination of nuts; peanuts, almond slivers, crushed macadamias for that extra nutty crunch
- Add in some peppermint or rose flavouring to add a little taste sensation to your chocolate balls
- Get creative and change up the biscuit content, crush some of your favourite biscuits as an extra big treat
