Squid Ink Linguine For Halloween

Besides candy and pumpkins, there's not much in the way of Halloween food is there? Well here is a particular icky Halloween pasta dish that might just change this.


Doesn’t this meal just scream Halloween dinner to you? It is so easy to make and would certainly scare your guests if you happen to be doing some Halloween entertaining. The great thing about using squid ink is that it is more readily available these days in speciality food stores and just brings that wow factor to a simple dish. Having recently returned from Italy, we noticed that squid ink was used quite regularly to flavour pasta and risottos and gives a very subtle seafood taste.


A little bit of ink goes a long way so don’t go overboard with it, and although a fabulous colour, it won’t fade when boiling. It won’t stain your hands or bench tops if you are a messy cook like me and it simply cleans off with soap and water. If you are looking for a short cut and don’t have time to make your pasta (I love the idea, but the reality is a different story…!) you can purchase squid ink linguine from a great brand called per tutti and just pull the meal together. Simple!


Ingredients::

  • x1 packet of squid ink linguine, I use per tutti

  • x1 tbsp creme fraiche

  • x3 cooked peeled prawns

  • x1 tsp salmon roe

  • x1 tsp chopped chives

  • handful micro herbs

  • wedge of lime


Method::

  1. Cook the pasta as per packet

  2. Once cooked al dente, spoon a dollop of creme fraiche

  3. Add three cooked prawns per serving

  4. Garnish and serve with wedge of lime
