Fancy Flatbread Just For Mum
Gorgeous to look at & healthy to boot!
Now that your Mother’s Day table is set (have a quick look here if you missed my styled table for Mother's Day) and Mum is invited over for lunch, the last piece to the puzzle is creating a menu that is fun to make, delicious to eat and looks just beautiful on the table once served. This artichoke pizza is so full of flavour and with beautiful fresh flowers, herbs and vegetables as a garnish on top - is also a very special meal to make for Mum. Buying edible flowers is actually quite easy these days and can be found at great stores like Lamana and Tuscano, they definitely bring the WOW factor when adding garnishes to food and if I may say so myself, a beautiful addition to a Mother’s day meal.
I love this flatbread! It’s one of my most ordered meals whenever I am at The Commons at Ormond Collective - light, delicious, colourful and just so full of flavour for something as simple as a flatbread. I also think it’s a perfect light meal. Gorgeous as an entree, this flatbread can be divided up and shared or served individually. I always try and make whatever meal I am preparing something that is easy and full proof so I can also enjoy spending time with my friends and family.
The Commons Flatbread
Confit artichoke, mozzarella & garden greens on crispy flatbread
Artichoke Mix
Ingredients:
500g stemless artichoke hearts chopped and well-drained
200g parmesan, grated
300g sour cream
250g cream cheese (broken into small pieces left out at room temp)
250g spinach, blanched and refreshed, chopped
Zest of 1 lemon
10g chopped parsley
10g Salt
2g pepper
mayo
( Yield: 1.5Kg )
Method:
In a large bowl, combine chopped artichokes, parmesan, sour cream, cream cheese and lemon zest. Mix until fully combined and season with salt and pepper
Plain in a tray and bake at 170C for 20 minutes (100% moisture)
Cools down completely and fold spinach and parsley through
Lemon and fennel seed dressing
Ingredients:
125ml lemon juice, strained
125ml EVO
30ml champagne vinegar
1 teaspoon lightly toasted fennel seeds
Salt to taste
( Yield: 280ml)
Method:
Mix all ingredients except EVO in a bowl
Slowly add EVO whilst whisking
Season with salt
now, to decorate!
Garnish
Use fresh herbs and vegetables like:
Radicchio
Witlof
Carrot ribbons
Radishes, sliced very thinly
Dill
Chervil
Snow pea tendrils
Rocket
Edible Flowers (violas work very well)
Assembling STEPS
Toast pita bread with olive oil in a hot pan. Just to get it warm and a bit of colour
Spread some artichoke mix on top evenly and cut in as many pieces as you need
Garnish using all or as many garnish ingredients, except flowers
Drizzle lemon and fennel seed dressing on top
Sprinkle some sea salt
Finish up with flowers
