Classic Scones Recipe
Ingredients:
2 cups self-raising flour
Pinch of salt
1/4 cup caster sugar
60g cold unsalted butter, chopped
1/2 cup milk
1/2 cup buttermilk
Strawberry jam and whipped cream to serve
Instructions:
Preheat your oven to 220°C (200°C fan-forced). Line a baking tray with baking paper.
Sift the flour and salt into a large bowl. Stir in the sugar.
Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.
Make a well in the centre and pour the combined milk and buttermilk. Stir with a flat-bladed knife until a sticky dough forms.
Turn the dough out onto a lightly floured surface. Knead gently until just smooth (be careful not to over-knead).
Pat the dough into a 2cm-thick round. Using a 5cm (diameter) round cutter, cut out scones. Gently press the leftover dough together and repeat until all dough is used.
Place the scones, touching, on the prepared tray. Lightly dust with flour. Bake for 10 to 12 minutes or until risen and golden.
Serve warm with strawberry jam and whipped cream.
