Delicious Sides For Festive Dining
What’s Your Typical Go-To Side Dish? Whatever your answer, it's time to make a change! I lean towards the tried and true favourites each year, the ones my family loves to eat and the recipes passed down. But this year, I am adding a new side to the Keebaugh Christmas that is simple, delicious, and healthy. What elevates this dish to Christmas Day worthy is the balsamic spray bottle I picked up from Amazon. Made for gardening, this plant spritzer works as a perfect oil spritzer! Filling it with the balsamic dressing and placing it on the table fits well within my garden theme this year. It's so cute!
Easy Balsamic Salmon Salad
Salad
6 cups mixed spinach & rocket
One medium cucumber diced
One small handful of pea shoots
1/2 cup pistachios
1/4 cup cubed beetroot
1/4 cup crumbled feta cheese
Ingredients
Salmon
4 salmon portions
1/2 teaspoon salt
1/2 teaspoon black pepper
Balsamic Dressing
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
Two cloves garlic crushed
One tablespoons of Dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat the oven to 450 degrees. Lightly grease a 9x13 pan with nonstick cooking spray.
Season the salmon portions with salt and pepper and place in the prepared baking dish.
Whisk together the balsamic vinegar, olive oil, garlic, dijon mustard, salt, and pepper in a small mixing bowl. This mixture will serve as both the seasoning on the salmon and the dressing for the salad.
Drizzle 1/3rd of the dressing onto the salmon and bake for 12-15 minutes until the salmon flakes easily with a fork.
Meanwhile, toss the green leaves, cucumbers, beetroot and feta cheese.
Serve salad greens topped with a portion of salmon, either whole or chopped, and drizzle with more dressing.
